You can use this recipe as a healthier alternative to normal icing
1 cup steamed mashed cauliflower, packed
1 tbsp lemon juice
1/4 cup coconut oil, just melted
1/4 cup mashed avocado
1/4 cup maple syrup
1/2 cup cocoa, sifted
1/4 tsp salt
Blend cauliflower and lemon juice to an extremely smooth puree.
Add cocont oil and blend until smooth and thick.
Add avocado and syrup and blend again.
Stir in cocoa and salt.
Blend one final time.
Refrigerate for 1 hour or overnight.
Before use, whip with an electric mixer or a hand whisk to loosen slightly.
