This bread is like the olden time sourdough bread but only gluten free. No baking powder or yeast is used. A cup of sourdough is the leavening agent. The sourdough plant is fed at least 5 days prior to baking the bread with it. It is fed with teff flour and water approximately every 12 hours. Use a glass bowl for the sourdough plant as bubbles forming on the sides of the bowl will indicate when the plant is ready to be used.
